The Mid-Summer Harvest





On Friday, we all headed out to the garden. John, Mark and Hannah worked on pulling up all the potatoes, and Glo and I headed out to the carrots. No joke, we were out there for HOURS! We also had to pick most of the tomatoes. That afternoon, we cleaned, cut, blanched and froze 20 cups of carrots. We've been eating salsa and tomatoes non-stop for the entire weekend (well, Johannah and John have), and tonight we had mashed potatoes for dinner. Yep, that's all I made. Mashed potatoes.

  1. As I dug potatoes I had a genetic flashback to Kennedys in Ireland, digging into the cold, rocky ground of Ireland, with a sheep nearby and trying to find dinner, potatoes...boil em, mash em, eat em with a spoon.
